Not sure how you're so unimaginative, but the game could be about the lead up to the hour of joy, it doesn't have to only take place during it.
Also do we even know if they're being literal about it being "an hour"? I find it unlikely that all the murdering only took about an hour / stopped after that

That's one of the biggest arguments against Ludwig being the Prototype. For me though, it's the fact that Playtime Co doesn't seem to fully understand how the Prototype works. Like in chapter 3 we find out they invasively study it daily which doesn't make sense if it's something of their own making.
A Prototype is something you make as a proof of concept. Playtime Co has successfully made the concept multiple times and yet they still keep this hostile thing around instead of getting a couple of guys with guns to put it down. That means there's still something to learn from it which means they still don't fully understand it.
