Mealworms taste nicer, but they're more difficult to raise since they eventually mature into beetles, so you have to make sure you keep an eye on them and only eat them at a certain stage of their lives. Farmers use a juvenile hormone to make the beetles stay in their mealworm form for longer, but in an end times scenario you wouldn't have access to this hormone.
Crickets are easy mode since you don't have to worry about the stage of life they're in, and they can be raised on grass alone, which is abundant.
